1. Banana Pancakes

What better way to start your day than with pancakes! These sweet, fluffy pancakes make the perfect lazy day breakfast. 

Ingredients:

  • 2 medium ripe bananas 
  • 2 tsp baking powder 
  • 1 tsp vanilla extract
  • 2 large eggs 
  • 4-6 tbsp coconut flour

Method:

  1. Mash the bananas until only small bits remain.
  2. Add baking powder, vanilla extract and eggs. Mix until thoroughly combined.
  3. Add coconut flour one tablespoon at a time until a thick batter is achieved. 
  4. Heat a skillet over medium heat, add a little cooking oil, then spoon in the batter.
  5. Cook on low heat and flip when golden brown.
  6. Add your desired toppings such as nuts, fresh fruit or maple syrup.

 

2. Kimchi Pancakes

Kimchi pancakes, or Kimchi Buchimgae, is a perfect savory snack! You can have it as your breakfast, an appetizer or just a snack to munch on during the day! 

Ingredients:

  • 1 large egg
  • 1½ cups kimchi (with kimchi liquid)
  • ¾ cup plus 1 tbsp all-purpose flour
  • 4 scallions

Method:

  1. Whisk the egg with a tablespoon of kimchi liquid, a tablespoon of soy sauce and a quarter cup of water. 
  2. Whisk in the flour.
  3. Coarsely chop the kimchi, add to bowl and stir to combine.
  4. Thinly slice the scallions diagonally, adding half to batter. Leave half to serve. 
  5. Heat a skillet over medium heat, add a little cooking oil, then spoon in the batter.
  6. Cook on low heat and flip when golden brown.
  7. Top with scallions and serve with dipping sauce of choice.

 

3. Chocolate Truffles

You’d be surprised at how just two ingredients can give you a dense, dark chocolate truffle! 

Ingredients:

  • 120g condensed milk
  • 60g cocoa powder

Method:

  1. Heat up condensed milk in a microwave for 30 seconds.
  2. Sift and mix in the cocoa powder, mixing with a spatula little by little.
  3. After adding in all the cocoa powder, knead by hand with gloves.
  4. Wrap the dough-like mixture with cling wrap and leave to harden in the fridge.
  5. After about an hour, portion it into bite sizes, roll into balls, and coat with cocoa powder.

 

4. No-churn Ice Cream

Who said you needed an ice cream machine to make ice cream? All you need is 3 ingredients to make this creamy, smooth, delicious treat!

Ingredients:

  • 200g condensed milk
  • 400ml whipping cream
  • 1 tsp vanilla extract 

Method

  1. Beat all the ingredients with an electric whisk until thick and stiff. 
  2. Scrape into a large loaf tin, cover with cling wrap and freeze until solid. 

 

5. Mac ‘n’ Cheese

For the cheese lovers, this cheesy goodness is a must-try easy Instagrammable food! Whip it up with just 3 ingredients and 3 steps. 

Ingredients:

  • 5 cups milk
  • 450g elbow macaroni
  • 2 cups (200g) shredded cheddar cheese

Method:

  1. Pour the milk into a large pot and bring to a boil.
  2. Add the pasta and stir constantly until the pasta is cooked, for about 10 minutes.
  3. Turn off the heat, then add the cheddar. Stir until the cheese is melted and the pasta is evenly coated.
