What’s sinigang?

Sinigang ranked number one on the list and some of you might not have heard about it yet, but it’s a traditional soup dish in the Philippines that often gets overshadowed by the popular adobo. Make no mistake though, locals love sinigang and experienced travellers can’t get enough of it. It’s basically a sour Filipino soup that gets its flavour from sampalok or tamarind and a souring agent. Its other vegetable ingredients include water spinach, green pepper, cabbage, broccoli, eggplant, diced tomatoes, sliced onions, ginger, and green beans.

Since Filipinos are also meat lovers, sinigang has meat varieties such as pork, beef, and chicken sinigang. You might also find fish, milkfish, and shrimp sinigang in various Filipino restaurants. According to TasteAtlas, “With its sour lightness perfectly matching the harsh tropical heat of the country, sinigang is a unique soup that is a true representative of Filipino cuisine.”
