With you and your kids together at home during this pandemic, why not have some fun together in the kitchen by whipping up some tasty meals? It could help them boost their development and best of all, they will be more inclined to eat what they prepare. It’s like killing two birds with one scone.
It is not too late to make cooking part of the family culture. Gather your kids and get your aprons ready. Meat me in the kitchen to prepare these easy and delicious meals that are also fun for kids and adults alike!
1. Chicken macaroni soup
Ingredients
4 small boneless, skinless chicken breasts
Salt and black pepper to taste
1 bay leaf (optional)
4 medium carrots cut into pieces
2 stalks celery, sliced
2 large cloves garlic, finely chopped
4 cans of low-sodium chicken broth
4 servings of macaroni
Methods
1. Season the chicken with salt and pepper to taste.
2. In a pot, add the seasoned chicken, carrot, celery, garlic and bay leaf.
3. Fill the pot with the chicken broth.
4. Bring to a boil, reduce heat and simmer until the chicken is cooked very thoroughly and tender.
5. While the soup is simmering, cook macaroni in lightly-salted boiling water.
6. Once the chicken is cooked, transfer it to a cutting board and let it cool for 5 minutes, before shredding into pieces.
7. Divide cooked macaroni, shredded chicken and blanched vegetables into 4 serving bowls. Ladle hot chicken stock over and serve immediately. Now that’s a comforting kids meal for all occasions!
2. Grilled cheese sandwich
Ingredients
4 slices of white bread
3 tablespoon of butter
Generous amount grated cheese, like cheddar, monterey jack, or any other melting cheese
Methods
1. Preheat skillet over medium heat.
2. Butter one side of the bread.
3. Place the buttered side of the bread on the skillet bottom.
4. Add a generous amount of chosen grated cheese.
5. Butter a second slice of bread and place it on top of the sandwich.
6. Grill until both sides are lightly brown (flip it occasionally) and cheese is gooey.
7. Repeat with remaining slices of bread and grated cheese.
3. Banana split pops
Ingredients
4 bananas
8 popsicle sticks
1 cup of chocolate chips
1 tablespoon of coconut oil
1/2 cup of rainbow sprinkles
Whipped cream, for serving
8 maraschino cherries
Methods
1. Cut bananas in half and level the sides.
2. Gently insert a popsicle stick into each banana piece and freeze them for 2 hours.
3. Combine chocolate chips and coconut oil and microwave in 30-second intervals, stirring in between, until completely melted.
4. Pour sprinkles into another small bowl.
5. Dip the top of each frozen banana in chocolate, then roll the melted chocolate tip around in sprinkles. Freeze until the chocolate is firm, about 15 minutes.
6. Top each pop with whipped cream and garnish with a maraschino cherry.
4. Pizza toast
Ingredients
1 large loaf of french bread
2 tablespoon of butter
1 cup pizza sauce
¼ cup fresh parsley, minced
15-20 slices of pepperoni
Methods
1. Preheat your oven to 400 degrees.
2. Place your bread on a baking sheet and butter it lightly.
3. Scoop a great dollop of pizza sauce and spread it over the buttered bread with the back of the spoon.
4. Top with a generous amount of grated mozzarella followed by a few pieces of pepperoni.
5. Place in the oven and allow it to bake until the cheese is melted.
6. Remove from the oven and sprinkle over some minced fresh parsley.
7. Allow it to cool before serving.
5. Fruit salad
Ingredients
Strawberries
Mandarin oranges
Kiwi
Blueberries
Red grapes
4 tablespoon of honey
Lime
100 grams of almond (optional)
Methods
1. Chop fruits (except blueberries) into small pieces and place them in a salad bowl.
2. In a small mixing bowl, scoop 5 tablespoon of honey and squeeze some line into it. Whisk together until blended.
3. Place almonds on a cutting board and chop them until evenly chopped
4. Drizzle dressing over fruits and toss to evenly coat.
4. Sprinkle chopped almonds.
