Thai food is one of the most flavourful and diverse cuisines in the world. Fresh lime and cilantro is popular in Thai dishes, and locals are experts on spicy food! Everyone knows and loves Pad Thai, Thai Curry, and Thom Yam, but today I am going to introduce you to Khao Soi (pronounced cow-soy).
Khao Soi comes from northern Thailand and is extremely popular in this region. It has Chinese influences due to Chiang Mai’s place on the Golden Triangle trading route. This dish can be found in Bangkok but is not common in southern Thailand. The best place to get it is in the north! Most restaurants in Chiang Mai, Pai, Chiang Rai, and the surrounding areas serve Khao Soi, and you can find it at some night markets and street vendors as well.
You are probably wondering “What is Khao Soi and what makes it so special?”
Khao Soi is a spicy coconut-curry-based noodle soup that is topped with crunchy noodles and fresh cilantro. It is served with pickled cabbage, raw red onion, and lime wedges on the side. You typically have the choice of chicken, pork or beef, but vegetarian and even vegan options can be found!
Finally, spicy chilli oil is always available on the side so you can customize the spiciness of your Khao Soi! When asked if you want it spicy, if you want just a little spice to begin with, say “nit noi,” (pronounced nit-noy) which means “little bit” in Thai. You can always add more later!
