Shake Shack’s culinary director, Mark Rosati, demonstrated the steps to recreate the cheesy goodness many can’t get enough of.

Ingredients
- 2 cups American cheese
- 2 cups Cheddar cheese
- 1 tbsp canola oil
- 1 tbsp white wine vinegar
- 6 thin slices of Jalapeño
- 2 tbsp white wine
- ¾ cup onion
- 2 cups heavy cream
- 2 tbsp peppercorns
- ½ tbsp salt
Recipe
- First, add 1 tbsp of canola oil to a heated pan.
- Add ¾ cup of sliced onions.
- Add 6 thin slices of Jalapeño.
- Next, add 2 tsp of whole peppercorns.
- Season with a sprinkle of ½ tsp of salt.
- Cook the onions until soft and translucent.
- Glaze the pan with 1 tbsp of white wine vinegar.
- Add 2 tsp of white wine.
- After the vinegar and white vine have reduced down, add 2 cups of heavy cream.
- Turn off the heat.
- Let the mixture steep for 30 minutes.
- Strain the cream mixture to remove all the solids.
- Pour the cream back into the pan.
- Increase the heat of the pan until it is boiling hot.
- After it comes to a boil, add 2 cups of Cheddar cheese and 2 cups of American cheese.
- Whisk the sauce until creamy.
- Enjoy!
